A thick cheesecake topped with apple pie filling, a crunchy oat crumble topping all on top of a cardamon spiced cookie crust.
Nothing welcomes Fall more than diving into a slice of this bad boy. As it hits labor day the apples at the grocery store call my name, asking me to BAKE SOMETHING!!! It's been awhile since I made a cheesecake and now I'm just asking myself, why did I wait so long?
This cheesecake is dense and decadent, but the apple topping lightens it up. Fresh fruit and spices, plus the texture of the crumble make this a delightful mouthful of fall goodness. Yes, fall goodness. ALSO the crust is made to have the texture of a cardamom sugar cookie. You can replace the cardamom with another favorite fall spice, but this adds a nice bright note that is delicious and unexpected.
This recipe is made for a 6 inch springform pan (a baby cheesecake), but you could double it to fit a 9inch and have a thicker cheesecake center. I also recommend using granny smith apples or another sweet baking apple because they add the best flavor and maintain their shape when baked.
Apple Pie Cheesecake with Oat Crumble and Cardamom Cookie Crust
Makes a 6 inch Cheesecake
Cardamom Cookie Crust
½ Cup (44g) Brown Sugar
37g (2 Tbsp.) Room Temp. Butter
1 Cup (50g) Oats
â…› Tsp. Vanilla Extract
½ Cup (40g) Flour
¼ Tsp. Cardamom
¼ Tsp. Cinnamon
Pinch of Salt
Preheat oven to 350℉
Beat butter and sugar until light and fluffy.
Add remaining ingredients until just combined.
Press into lined springform pan using the bottom of a glass to make sure mixture is pressed tight.
Bake for 7 minutes. Then take out to cool slightly.
Cheesecake Filling
1 Brick (16oz) of Cream Cheese (room temp)
¼ Cup (50g) Sugar
¼ Cup (60g) Sour Cream
½ Tsp. Vanilla
2 Eggs
Beat cream cheese, sour cream, vanilla and sugar until light and fluffy.
Add eggs one at a time, beating until combined after each addition.
Add mixture to pan on top of crust, making sure is spread even.
Apple Pie Topping
2 Apples
1 Tsp. Cinnanmon
2 Tbsp. Sugar
Peel and chop apples till they are about half inch squares.
Add chopped apples to a bowl and mix in sugar and cinnamon.
Add mixture on top of cheesecake.
Oat Crumble
3 Tbsp. of Melted Butter
¼ Cup (25g) Flour
¼ Cup (25g) Rolled Oats
¼ Cup (50g) Brown Sugar
Mix all the ingredients in a medium sized bowl until there are no more dry spots.
Sprinkle on top of apple mixture, making sure to cover entire surface.
Bake pie at 350℉ for 40 minutes. Cool in fridge before removing pie from springform pan.
